A Bentley Continental GT Speed convertible would fit the bill. Let's face it, you're not getting a light, driver focused experience anyways, might as well go fast. Though tbh the base or even V8 would suffice.

Yup. You could even get them in VR4 trim. They were U.S. only, first retractable hardtop in the country since the Fairlane Skyliner in 1959. Rumor is that they were what prompted Mercedes to come up with the original SLK.
